Fun St. Patrick's Day Dinner

Oh my goodness! This year for St. Patrick's Day, Roger made a traditional Irish dinner of corned beef, cabbage, potatoes and carrots. It was so delicious we just could not belive it!!!

Between the two of us, in 10 years of marriage, we have never cooked corned beef before. The beef comes with a seasoning packet that you spread over the meat. It gave the meat such wonderful flavor. The recipe said to pile everything in the slow cooker and let it go for 8 hours. How easy is that??? By the time we all got home from work and school it was ready to eat and the house smelled incredible. I've posted the easy recipe for your enjoyment if you'd like to give it a try. INGREDIENTS
1 medium onion, cut into wedges
4 medium potatoes, peeled and quartered
1 pound baby carrots
3 cups water
3 garlic cloves, minced
1 bay leaf
2 tablespoons sugar
2 tablespoons cider vinegar
1/2 teaspoon pepper
1 (3 pound) corned beef brisket with spice packet, cut in half
1 small head cabbage, cut into wedges

DIRECTIONS
Place the onion, potatoes and carrots in a 5-qt. slow cooker. Combine water, garlic, bay leaf, sugar, vinegar, pepper and contents of spice packet; pour over vegetables. Top with brisket and cabbage. Cover and cook on low for 8-9 hours or until meat and vegetables are tender. Remove bay leaf before serving.
